Coke Chicken Wings

This is a quick and delicious recipe that I cook at home all the time, I prefer Coca Cola because I find the others too sweet, but you can use whichever you like.  I bought all the ingredients from Tesco’s, but other big supermarkets should have the same.



Ingredients:

12 whole chicken wings, joint the chicken wings into small pieces
3 spring onions trimmed and sliced
3 cloves garlic sliced in half
2 sliced fresh ginger, peeled
1 teaspoon Sichuan pepper
2 star anise
1 tablespoon light soy sauce
3 tablespoons peanut oil
500ml Coca Cola
salt

Method

Score the chicken with a knife to help the flavor go in, blanch in boiling water to remove some of the fat and blood, then take out put onto a plate for later.

Put a flat non-stick frying pan on a medium high heat, add a little  peanut oil and fry chicken wings 3 or 4 minutes each side, until both sides are a golden colour.
Take the chicken out and let drain on kitchen paper.  Add a little more oil if needed, then add the spring onion, garlic, ginger, star anise and sichuan pepper into the pan and fry for a few minutes before returning the chicken wings to the pan. Then add 1 tablespoon light soy sauce and coke into the pan, make sure the coke covers the chicken wings.  Turn the heat up until the coke boils, then turn to the low heat to simmer the wings for about 15 or 20 minutes, or until the sauce is reduced and almost go thick. Try the sauce if not salty enough add some more to taste. Then turn to high heat make the sauce go thick.


To serve:

This is a very simple dish for Chinese to eat at home. For us we just place all chicken wings in a big plate, served with other 2 or 3 dishes on table. Then everyone gets a small bowl of rice to eat with it.  If you prefer you can place the chicken with the rice into a bowl or plate. Of course you need some other vegetables to serve with it.  Pak Choi or Broccoli go particularly well with this.
