Coke and Plum Pork Ribs


You may have read my previous post - Coke Chicken recipe already.  Actually the coke works well with pork as well, especially if you add some plum sauce at the end of cooking, it goes very sticky and fruity and totally delicious!  The recipe is almost the same as the chicken wings.  Recently I cooked it and took to a party for my friends. They all loved it and were surprised how well the coke went with pork. 

Ingredients
500g Pork ribs chopped into 2.5cm lengths (butcher can do this if you ask nicely)
300ml Coke ( I like use Coca Cola as it not too sweet)
2 spring onions
2 slice fresh ginger peeled
3 cloves garlic sliced in half
2 star anise
3 dry red chilli cut to half deseeded
Cinnamon stick 3cm
1 teaspoon Sichuan pepper
1 tablespoon light soy sauce
2 tablespoon peanut oil
1 tablespoon shaoxing wine
3-4 tablespoon Sharwoods Plum Sauce (this is my favourite and has a true Chinese Plum flavour)

Method
Blanch the pork ribs in boiling water with one teaspoon sichuan pepper to remove the blood, then take out put onto a plate for later.


Heat a flat non-stick frying pan, add 2 tablespoon peanut oil and fry the pork ribs until both sides are a golden colour. Take the pork ribs out for later. Add a little bit more oil if needed, then add spring onions, ginger, garlic, dry chilli, star anise and cinnamon into the pan, fry a few minutes before returning the pork ribs to the pan. Then add 1 tablespoon light soy sauce and the coke into the pan, make sure the coke covers the pork ribs. Turn the heat up until the coke boils, then turn to the low heat and cover to simmer the pork ribs for 50 or 60 minutes. When the sauce starts to thicken, add the plum sauce and stir to mix well with pork ribs for 1 or 2 minutes. Add 1 teaspoon salt (less or more for your taste). Turn to high heat make the sauce go thick. Serve in a bowl. Try this recipe, maybe can be your next party dish!!!
